Quick Salmon and Creamy Greens

This is an incredibly fast and healthy dinner, it's perfect for midweek. It takes about 15 minutes to prepare and cook.

 
You will need (per person):
A skinless salmon fillet
Chilli powder (mild or hot depending on your preference)
A courgette
Large handful of washed baby spinach
A heaped table spoon of garlic and herb light soft cheese
 
1. Using a vegetable peeler, ribbon the courgette and put in a wok or large frying pan with the spinach
2. In a bowl sprinkle chilli powder over one side of the salmon
3. Heat some oil in a frying pan and when hot add the salmon, chilli side down for about 3-5 mins
4. Turn the salmon (if it's blackened that's ok, it won't taste burnt)
5. Heat the courgette and spinach until the spinach wilts and stir in the soft cheese
6. Cook the salmon to your preference (I quite like it almost raw in the middle but some people don't)
7. Spoon the veg onto a plate and (here's the Master Chef bit) place the salmon on top
 
Okay, mine doesn't look quite 'Master Chef' but it is incredibly delicious and under 500 calories (that's not exact but according to 'My Fitness Pal')... See, told you it was quick!
